Why does milk overflow when boiled while water doesn't?

Ever you noticed? Your mother gives you responsibility for handling milk in the kitchen and she left for her work. But after a while you see the milk overflowing in the kitchen and you didn't notice that!

Suddenly, your mom comes back and sees what you have done!

Be ready for it! Enemy's ahead! Then comes flying shoes over to you!!

Play catch! catch! of that shoe between you and your mother!!! lol!

Ok, comes to the point.

Before we go the point, we must know

What is milk made of?

Milk contains 86% water, 4% protein and 5% lactose (milk sugar) and 1% other minerals. When we boil milk, the fat, sugar, proteins and minerals get separated.

Why does milk overflow when boiled?

As these are lighter than milk they rise up to the top and collect into the form of cream.

During heating, some amount of water gets converted into vapour and the bubbles of water vapour try to rise to the top. But the heat and the vapour is trapped below the layer of water and the fat droplets (creamy layer).

Note that: Fat/Cream have a higher boiling point than water.

As the milk is heated further, the water vapour expands and thick foam is produced on the top.

As the milk is boiled continuously, the water which boils at 100°C produces more water vapour and pressure builds up in the boiling milk.

With the increase of time, the heat increases expanding water vapours, which then starts to push the top layer (creamy layer) and thus the milk overflows for heating.

But how can I save my life from my mom's flying shoe?

How to prevent it?

The overflow of milk can be prevented by lowering the heat or just stirring the spoon on the milk container so that the water vapour is able to escape and can't make a creamy layer.

Why water doesn't overflow when boiled?

Well, Pure water doesn't have fat, protein or carbohydrates so it can not make creamy layer or something like that.

Pure water only contains H20 and some minerals.

So, It doesn't overflow when hitter!
